Tamales for Christmas or Not

Good Tex-Mex food, it does not exist in New Hampshire. There are places that try but never quite make it. I dream of enchiladas smothered in sauce with heaps of melted cheese on top and how can you have Christmas without tamales, it is just wrong.

I became so desperate that I decided to make my own Tex-Mex food. Make tamales for Christmas what could be so hard, I searched and found all the ingredients, part of which my sister had to mail me from Sugarland . Ready to make a practice batch before making them for my family for Christmas. Started with the tamale dough, looked easy enough , according to the recipe my dough should look like buttercream frosting mine looked more like oatmeal. After the third try I gave up went to Walmart bought Ro-tel tomatoes and a big can of chili. We will be having Frito Pie and Velveeta cheese dip with Ro-tel tomatoes for Christmas dinner this year.
